THE UK'S FIRST DEDICATED GLUTEN-FREE CRAFT BREWERY

Bellfield Brewery is a new, family-run brewery with a mission: to craft-brew certified gluten-free beer that tastes great. Bellfield's founders know from personal experience the grief that comes from not being able to find a delicious, UK-brewed, gluten-free beer. We intend to put this right. We are the UK's first dedicated gluten-free brewery, producing craft beer in small batches, using traditional brewing methods combined with non-traditional ingredients; the perfect combination of science and art.

We are producing beer in the UK, in small batches, using traditional brewing methods combined with non-traditional ingredients; beers that can be enjoyed by both coeliacs and the growing number of people who wish to avoid gluten in their diet.

Why gluten free?

Coeliacs (pronounced see-liac) have a serious autoimmune disease caused by an allergy to gluten. Many other people actively avoid gluten. That means you can't eat normal bread, pizza, pasta, crisps, tortillas, ready meals, sauces, pastry, pies, soya sauce or chutneys – and the list goes on. Nor can you drink beer. For passionate beer drinkers who have to avoid gluten, it's tough being denied one of the great joys of life!

The number of dedicated gluten-free breweries in the world can be counted on the fingers of one hand. We plan to join this elite group and we're now setting up our brewery in Edinburgh, a city with a proud brewing heritage and history.

What does gluten-free really mean?

Around the world, standards and definitions of "gluten-free" vary. For example, in the European Union, a beer with less than 20 parts per million gluten (20ppm) is technically "gluten-free".

According to Gluten Regulation EC 41/2009,foodstuffs containing 20 parts per million (ppm) gluten can be labelled as gluten-free. Very low gluten foods are those containing between 21 and 100 ppm gluten.

How do you test your beers?

The founders of Bellfield Brewery are coeliac and we take the production and testing of our beers very seriously. We only produce certified gluten-free beer.

Every single one our recipes goes through a rigorous testing regime to be certain that we meet the stringent standards required to secure coeliac UK's "crossed grain" accreditation.

We test each batch of beer at a UKAS accredited laboratory in the UK using the industry standard competitive R5 ELISA test, to ensure the beer is eligible for gluten-free certification.

What are gluten-free beers really and how are they produced?

By way of background, there are two known ways to produce gluten free beer. Some gluten free beers are brewed from non-gluten containing grains or other ingredients. With attention to the yeast used, the beer can be brewed from start to finish without ever containing gluten.

Gluten removed beers are made from traditional gluten grains like malted barley, but then the gluten is removed in some fashion before the final product is released. This process allows a taste more closely mimicking traditional beer.

So are you brewing with malted barley or entirely gluten-free ingredients?

We are working on both the approaches outlined above:

  1. Brewing with unconventional grains: based on a rigorous programme of R&D including work with the International Centre for Brewing and Distilling at Heriot-Watt University in Edinburgh. We have a recipe that has been tested at scale so we know it works commercially. This is now being further developed and we will pursue this path further when we have our own brewery set up and are in a position to make the significant capital investment required.
  2. Certified gluten-free: we have already produced our first two beers (a Pilsner and an IPA), these are brewed with malted barley, but every stage of our process has been optimised to reduce the gluten content. We do not add enzymes such as Brewers Clarex during the brewing process. Our beers are tested using the industry standard competitive R5 ELISA test by a UKAS accredited lab in the UK to ensure it is eligible for gluten-free certification.

Why is it called Bellfield Brewery?

The idea for the brewery was conceived in Portobello, Edinburgh and the name is a local street name. The 'field' in front of one of our founder's house was reputedly used for casting bells. Bellfield also means wide open fields and spaces, which we thought fitting for an ambitious start up.
